When you arrive at work you must:
- Wash your hands
- Put on a clean uniform
- Put on clean, closed non-slip soles
- Keep hair tied up (if shoulder length or longer)
- Remove jewellery
- Do not use heavily scented perfumes/deodorants
- Cover cuts/sores/boils with a clean waterproof dressing
- Have short nails that are free from polish - no false nails
Do Not
- Chew gum or eat whilst handling food
- Sneeze or cough over food
Hand Washing
- Under hot running water
- Use anti-bacterial soap
- For 20 seconds
- Dry with a paper towel or hot air dryers
- You must wash your hands frequently
Slips, Trips, Falls
- Wear sensible / slip-resistant shoes
- Look out for tripping hazards and remove them
- Mopping up spills immediately
- Use wet floor signs when appropriate
Illness
If you have diarrhoea and/or vomiting you must not handle food or complete tasks until you have been symptom-free for 48 hours.
It is essential you tell the manager on duty if you do not feel well, especially if you:
- Have been sick
- Have diarrhoea, vomiting or an upset stomach
- Live with anyone who is sick or has diarrhoea
- Were ill while on holiday
- Have ear, nose or throat infections
- Have infected sores or cuts
- Have skin irritations/infections
- Think you are suffering from a disease that could be passed through food
Cleaning
- All surfaces and equipment which come into contact with food should be thoroughly cleaned and disinfected
- After preparing raw food, detergent/disinfectant should be applied twice
- Unplug any electric equipment before cleaning
Food allergies
Be aware of the policy on handling customer enquiries concerning potential food allergens in each venue you work in.
- In any doubt, please ask a member of staff
- If a customer states they have a food allergy, this must be taken seriously.
- Note foods mentioned by the customer
- Go to the designated person for accurate information on ingredients present in food
- Always follow the allergy process of the venue
Fire
What to do if you discover a fire:
- Raise the alarm using the nearest manual call point– no matter how small the fire.
If you hear the fire alarm:
- Keep calm, reassure and assist customers and visitors
- Leave the building immediately by the nearest fire exit
- Do not stop to collect personal belongings
- Move quickly and quietly, do not run
- Close windows and always close doors behind you
- Go straight to your assembly point
- Make sure that you are accounted for
- Do not re-enter the building until the ‘all clear’ has been given
Manual Handling
- Do not lift anything that is too heavy (test it to see if you can move it with your foot first)
- If it is heavy - get help
- To lift - bend at the knees, head up and keep your back straight
General Guidance
- Take reasonable care of your own health & safety and of others
- Report any health and safety concerns to the manager on duty
- Ensure awareness of out-of-bound areas/equipment you are not permitted to use/tasks you are not permitted to carry out
- Do not handle sharp objects
- Help maintain a healthy and safe workplace by:
- Wearing PPE when requested
- Notify a member of staff of something that could cause an accident
- Not using any equipment you have not had training for
- Communicate with team members when leaving hot preparations /cookware/utensils. Just say ‘hot’
- Communicate with team members when you are coming up behind them. Just say ‘backs’ or ‘mind your backs’
- Carry out work in accordance with safety rules
What should you do if you have an accident?
- Call the manager on duty
- All accidents must be recorded, no matter how minor
What should you do if you see someone injured?
- Get help – either call the Emergency First Aider at Work/First Aider at Work or ensure someone does.
- Do not move the patient or offer drinks etc., you may make injuries worse
